8 tablespoons (1 stick) unsalted butter at room temperature
1 teaspoon lemon juice
1 teaspoon finely chopped dill
1 teaspoon minced shallots
1/2 teaspoon salt

1) Place softened butter in a small bowl. Add the lemon juice, dill, shallots, and salt, and mash with the tines of a fork until butter appears homogenous. A food processor fitted with a small bowl also works well.
2) Shape butter into a log and roll tightly in wax paper. Refrigerate for at least 1 hour, or until ready to pack picnic.
