2 1/2 cups sifted flour
1/2 cup powdered sugar, plus more to garnish
1 cup butter
4 large eggs, beaten
2 cups granulated sugar
1/3 cup lemon juice
1/2 teaspoon lemon zest
1/2 teaspoon baking powder

1) Preheat oven to 350°F.
2) For the cookie base, combine 2 cups of the flour, the powdered sugar, and the butter. Mix with hands until it clings together. Press into a 13 x 9 x 2-inch pan. Bake 20–25 minutes or until lightly browned. Leave oven at 350°F.
3) For the filling, beat together eggs, granulated sugar, lemon juice, and lemon zest. Separately, sift together the remaining 1/2 cup flour and baking powder. Stir dry ingredients into egg mixture. Pour over baked, cooled crust.
4) Bake lemon bars for 25 minutes. Sprinkle with powdered sugar and let cool on wire rack. Cut into bars.
