Herb-Marinated Tomatoes
Serves 4

The farmstand tomatoes you picked up on the drive to the shore have met their destiny! This recipe pairs ripe tomatoes with olive oil, lemon, garlic, and herbs, letting the flavor of the produce shine through.




  • 4 beefsteak tomatoes
  • 1/4 cup olive oil
  • 1 tablespoon lemon juice
  • 2 cloves garlic, crushed
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • Ground pepper to taste
  • 1 tablespoon chopped fresh parsley

    1) In a small bowl, combine mayonnaise, mustard, and honey. Add apple slices to mayonnaise mixture and allow to sit for 15 minutes. This will prevent the apples from browning (oxidizing).

    2) Use a serrated knife to cut the top third off each pita, then gently open each pita pocket. Spread insides generously with the flavored mayonnaise. Fill each pocket with a quarter of the apple slices, 1/4 cup of shredded cheese, and 2 slices of ham.
