The piquant, earthy flavors of this compound butter play beautifully with corn’s natural sweetness. The same butter is delicious on our Fresh-Corn Cornbread.
1/2 cup (1 stick) unsalted butter at room temperature
2 jalapeño peppers, seeded and finely minced
1/2 teaspoon ground cumin
1) Beat the butter with an electric mixer until light and fluffy. Beat in the jalapeños, then the cumin.
2) Refrigerate in a covered container until ready to use.
