   SOUTHEAST ASIAN FEAST   


Jasmine Rice Salad
Serves 4

Jasmine rice, a highly fragrant medium-grain white rice, is popular throughout southeast Asia. If you can’t find it, substitute basmati rice.



  • 3 tablespoons fish sauce
  • 3 tablespoons lime juice
  • 1 tablespoons canola or vegetable oil
  • 2 1/2 teaspoons sugar
  • 1 dash cayenne pepper
  • 3 cups cooked jasmine or other long-grain rice
  • 3 carrots, grated
  • 1 cucumber, peeled and diced
  • 5 tablespoons chopped cilantro
  • 4 scallions, white and light green sections finely chopped
  • Salt and pepper

    1) Make a dressing by combining the fish sauce, lime juice, oil, sugar, and cayenne in a nonreactive bowl. Let dressing stand for 5 minutes to encourage the flavors blend.

    2) Into the dressing, stir the rice, carrots, cucumbers, cilantro, and scallions. Season rice salad to taste with salt and pepper.
