Beach Picnic Menu


No-Sand Pecan Sandies
Makes about 48 cookies

Rich and nutty, pecan sandies are practically addictive. If you live in the south and can get fresh pecans, the cookies will be that much more delicious.




  • 1/2 cup (1 stick) butter, softened
  • 1/2 cup vegetable oil
  • 1/2 cup granulated sugar, plus more for decoration
  • 1/2 cup confectioners' sugar, sifted
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1/2 teaspoon salt
  • 1 1/4 cup chopped pecans

    1) Preheat oven to 375˚F.

    2) In a large bowl, cream together the butter, vegetable oil, 1/2 cup granulated sugar, and confectioners' sugar until smooth. Beat in the egg, then stir in the vanilla

    3) In a separate bowl, combine the flour, baking soda, cream of tartar, and salt; stir into the creamed mixture. Mix in 1 cup of the pecans.




    4) Spread a few tablespoons of sugar on a plate. Form dough into 1-inch balls and roll each ball in the sugar. Place the cookies 2 inches apart on ungreased cookie sheets. Using the remaining nuts, dot the top of each cookie with a pecan piece.


    5) Bake for 10 to 12 minutes or until the edges are golden. Remove from cookie sheets to cool on wire racks.
