Be sure to take plenty of snacks on your picnic. Chips, dip, nuts & fruits all make great snacks.
Humas
(makes 3-4 servings)
Ingredients
1 cup chick peas (if using canned, reserve liquid)
1-2 lemons, juiced
2 cloves garlic
1 1/2 tbsp. chopped parsley
1 tbsp. tahini paste (optional)
4-5 tbsp. reserved liquid from beans or water
1 cup good olive oil salt to taste
In a food processor: 1. turn on processor and drop in garlic to be chopped fine 2. turn off processor and add remaining ingredients 3. turn on processor and blend until creamy; add additional lemon juice, olive oil and water as needed for consistency and taste. Best Served Cold.
