Caribbean Flavors


Pineapple Salsa
Makes about 2 cups

The fruitiness of this salsa provides a welcome counterpoint to the heat and spices of the jerk pork.



  • 1 pineapple, peeled, cored, and diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 red onion, diced
  • 3 chipotle peppers, minced
  • 1/4 cup chopped cilantro
  • Zest and juice of 2 limes
  • 1/2 cup sugar
  • 2 teaspoons ground coriander
  • 2 teaspoons ground cumin
  • 2 teaspoons salt

    1) Mix all ingredients together. Taste and adjust with more salt, lime juice, sugar, or chipotle, if desired. Refrigerate at least 2 hours before serving to let the flavors mingle.
