4 tablespoons mayonnaise
2 tablespoons prepared mustard
2 tablespoons honey
1 large tart apple, such as a Granny Smith, cored and sliced thin
4 pocket-style pita breads
1 cup (about 4 ounces) shredded cheddar cheese
8 slices ham

1) In a small bowl, combine mayonnaise, mustard, and honey. Add apple slices to mayonnaise mixture and allow to sit for 15 minutes. This will prevent the apples from browning (oxidizing).
2) Use a serrated knife to cut the top third off each pita, then gently open each pita pocket. Spread insides generously with the flavored mayonnaise. Fill each pocket with a quarter of the apple slices, 1/4 cup of shredded cheese, and 2 slices of ham.
