Healthy Prosciutto-Wrapped Chicken Breast
Ever gourmet griller will enjoy grilling up this delicious recipe. It’s an easy way to present a healthy chicken feast for your entire tailgating party. You can substitute halibut fillets for an even healthier dish!
Ingredients
- 1-2 Chicken Breasts per person (recommend: hormone-free chicken)
- Sea Salt
- Cracked Black Pepper
- 2-3 Slices of Prosciutto per Chicken
Directions
- Fire up your portable BBQ grill.
- Season each chicken breast with sea salt and cracked black pepper.
- Wrap each chicken breast in thin slices of prosciutto.
- Grill over low heat until the prosciutto is crisp and the chicken breast is firm.
It’s that easy to make a delicious and healthy tailgating dish that everyone will drool over! Grill the same way if you decide to substitute halibut fillets instead of chicken breasts.
Lean Broccoli Cole Slaw
Everyone knows broccoli is good for you, and there are a variety of ways you can enjoy this delicious veggie on and off the field! Grab a bag of packaged Broccoli Cole Slaw at your local grocery store, or pick several heads of crown broccoli and chop or shred it yourself to cut costs. A serving of broccoli slaw mix is high in fiber, vitamin A, and vitamin C with low calories and 0 fat!
Ingredients
- Package of Broccoli Cole Slaw
- Or if you decide to make it yourself, several heads of crown broccoli and a couple of carrots (shredded)
- Light Dressing of Choice (Ranch, Vinaigrette, French, etc.); Or light mayo if you prefer
- Cracked Black Pepper
Directions
- Chop and shred the broccoli and carrots, or use a package of pre-shredded Broccoli Cole Slaw mix.
- Add in your light dressing or light mayo of choice and sprinkle cracked black pepper.
- Mix well and taste. Add dressing and black pepper as needed.
You can also eat this mix raw; or throw the broccoli and carrots into a pan and saute for a delicious stir-fry. Just add a dash of soy sauce, sesame oil and sesame seeds for a healthy treat that makes a great dish for any occasion!
Mini-Waist Twice Baked Potatoes
A great finger food and appetizer that is easy to make and can be kept warm in your picnic cooler tote or electric tailgate hot-bag. Everyone loves these little gems, plus they are loaded with protein and healthier calories than the bags of greasy chips that will be within easy reach.
Ingredients
- 24 baby Yukon Gold or red potatoes (small russets work too - but they are usually too big)
- 2-3 TBSP extra virgin olive oil
- 2 tsp freshly chopped thyme
- 4 oz. apple-wood smoked bacon, cooked-crispy and crumbled (recommend: turkey bacon)
- 5 TBSP chopped chives
- ½ cup light sour cream (recommend: Fat Free Sour Cream)
- ½ cup Parmigiano-Reggiano, coarsely grated (recommend: low-fat parmesan cheese)
- Sea Salt
- Cracked Black Pepper
Directions
- Preheat oven to 425 degrees.
- Wash and dry potatoes and place on a large baking sheet.
- Toss with olive oil to lightly coat potatoes.
- Sprinkle with 1 tsp. fresh Thyme, sea salt and pepper and then toss.
- Bake the potatoes for 20-25 minutes until they are very tender when pierced with a fork or tooth pick.
- *Remove from the oven and allow to completely cool.*
- Increase oven to 450 degrees.
- Make sure potatoes are cool enough to handle, then cut the top 1/4 of the potato off and discard.
- Use a small spoon to gently hollow out and scoop the inside potato flesh out and transfer it to a large bowl.
- Mash the potato flesh with a fork or masher and combine it with bacon, chives, sour cream and the remaining 1 tsp. Thyme.
- Season to taste with sea salt and pepper.
- Carefully fill each hollowed potato with the filling. It should be slightly mounded at the top.
- Sprinkle with Parmigiano-Reggiano, or Parmesan cheese.
- Make sure all potatoes are facing up on the baking sheet and return to the oven.
- Bake an additional 8-10 minutes until filling is completely heated.
- Remove from oven, sprinkle with the remaining chives.
Mini-Waist Twice Baked Potatoes need to be served immediately while warm. If you’re heading to a tailgate, then wrap in aluminum foil and keep it warm in an electric tailgate hot-bag or an insulated cooler. If they need to be warmed up again, toss them on your portable bbq grill.
Irresistible Bacon Wrapped Smoked Oysters
Get the guys ‘n gals ready to for heaven with this mind-blowing dish! A natural aphrodisiac, the smoked oysters are thoroughly enhanced with the crispy goodness of everyone’s favorite: bacon!
Ingredients
- 2 cans Smoked Oysters
- ¼ cup Extra Light Virgin Olive Oil
- ½ lbs Bacon (recommend: Turkey Bacon)
- 3 tbsp. Minced Garlic
- 40 Round Wooden Toothpicks
Directions
- Cut turkey bacon strips into thirds.
- Wrap a turkey bacon slice around each oyster and place a toothpick through it to hold in place.
- In a medium skillet, heat olive oil, and add minced garlic.
- Cook and rotate bacon wrapped oysters in olive oil until bacon is crisp.
- Remove oysters from the pan and lay on a paper towel to drain.
A sure-fire way to heat up your next tailgating or home-gating party! Wrap in aluminum and place in an electric tailgate hot-bag or a portable insulated cooler to keep warm until you arrive. Bring your portable BBQ grill and place on the grill to warm up and serve to your eager crowd!
